Transformation of Gardenia Yellow Waste Production into Gardenia Blue Pigment by Leifsonia sp. ZF2019 and Evaluation of Its Physicochemical Stability

To produce gardenia blue pigment (GBP) by natural fermentation, a novel bacteria, Leifsonia sp. ZF2019, was isolated from the larvae of pest Gardenia jasminoides Ellis fruits and shown to be able convert yellow waste production (GYWP) into GBP. The fermentation medium growth conditions were screened, GBP yield, color value, stability compared those Aspergillus niger fermentation. ZF2019 effectively in containing GYWP leucine (Leu). A temperature 35 °C, 0.8% leu content, period 72 h, pH value 7.0 optimal culture conditions. produced higher yield quality than that purified D4020 macroporous adsorbent resin, effects pH, temperature, light, oxidant reductant, conventional food additives, metal ions on its evaluated. as stable generated directly pure genipin. LC-MS revealed molecular formula C37H45N2O8. Our results provide reference for preparation efficient, stable, reliable, high-quality pigments.
